Passatelli with broth: the recipe

Enjoy this short video recipe where Nonna Violante teaches us to make Passatelli with broth. Strozzapreti is a typical and very tasty homemade Italian pasta from Romagna.

Simple to make, they traditionally go with a chicken broth.

Ingredients for 8 people:

 
  • 250 g. of plain breadcrumbs (undressed)
  • 125 g. of grated Parmesan
  • 4 eggs
  • 1/2 lemon zest
  • grated nutmeg

     
Procedure:

Mix all the ingredients well until you get a soft ball of dough. Cover and rest it for 5 minutes. When it’s ready, cut the dough to create small balls. Using the tool to make passatelli (potato ricer), squeeze each ball inside it. Help yourself with a knife to cut passatelli when they are long enough. Put them inside the boiling chicken broth (that you should have already prepared) for 4-5 minutes. Turn the heat off and let them rest for a few minutes.

Flour is not needed for this recipe. However, Nonna Violante suggests that you can add just a little bit of flour (a teaspoon) when you are making dough to avoid melting passatelli down when they are cooking in the boiling broth.
